Few more I have are completing Deathsmiles without using a continue, only a couple characters though. Some harder to use than others.
Beating Omega Five with all characters without dying once. Loved that game. Neat little shmup.
Getting an S rank in DOA4 online. Never could get SS though...
And beating Force Unleashed on Jedi Master difficulty. Fuck you Kazdan Paratus.

I suppose if i had an argument. Infinite or regenerating abilities make certain games easier than others. When you have to work for your life and weapons it makes things more complicated and in my opinion more difficult.
For instance Gradius is harder than Contra because you have to work harder for your power ups and use them more wisely. Dieing with a full arsenal is a huge pain. But beating Contra with the pea shooter is not very hard. Though i suppose walls are harder to dodge than bullets.

My favorite "hard" games will always be the ID Software ones. From Doom to Quake 2. They were well suited for coop. But beatable alone with enough trial and error (or studying the game). They actually sold thick ass books with complete layouts of all the levels in Doom specifically for people who wanted to beat Nightmare.
The Quake speedron on Speeddemos is sick. Rocket jumping to skip entire portions of levels. So awesome. I loved the freedom of movement. And the magical ability to control your momentum while in mid air..
