Well, the game is NOT balanced, not should it be, if its going for realism. Chuck Liddell would probably get knocked out by Brock Lesnar 9 times out of 10 in real life, because Brock outweighs him greatly. Every fighter can beat every other fighter, but thats including flash KOs and the stronger opponent making a stupid mistake, which happens.
Against Brock Lesnar (a popular pick), only a handful of people can beat him (in my experience). Mir (the only person to ever beat Brock in RL) can beat him with his submissions, Sylvia can beat him if you are smart because he's like 6'8" or 6'9", etc. You have to have an advantage over your opponent AND use that advantage to win. If you don't use your advantage you will most likely lose.
I'm not saying Boxing/Wrestling is the best combo, because I have been beaten 12 times online now and I'd say I've used the Boxing/Wrestling combo waaay more than anything else online. The only reason I choose it is because I found a very great strategy using those tactics. I use my back foot to keep kicking the stomach, since my legs are longer than my arms (forward and O/B). I use that as my jab since my actual jab costs waaay too much stamina for a mere jab IMO. If they catch my foot and take me down, I'm happy with that, because as a wrestler, my ground game is dominant, I can just roll right over and be on top of my opponent rather easily. Most of the time they catch my foot and get beat up on the ground and then they won't catch my foot anymore because they are scared of the ground game (unless they are a BJJ submissionist). I use my body kicks as a jab until they press R2/RT to block the body then I do the double hooks to the face, which is probably the most painful standing strike move I own.
I also keep going for takedowns throughout and try to get either a full mount or standing mount (which is deadly). As long as you hold the right stick to the right, most people can't even get out from under you (idiots). That's why I pick that combo, it's like a cakewalk having a super powerful striker and advanced grappler.
As far as CAF, you can play online with CAF but I didn't, because my CAF still isn't retired yet, I'm only at 26-0 though because I've been playing online more than my career in the final hours I had it. So I didn't think my CAF would stand a chance against people that played the whole career. You pick your settings, mine were: Heavyweight or Light Heavyweight division, UFC Fighters ONLY, Cutscenes OFF, Advanced Rank OFF (only play people your level or lower). And I would jump in a game immediately. If no one was hosting a game with those settings, it would say, "No game found, would you like to host?". Click yes, and you will only have to wait less than a few seconds because there are so many people looking for games.
It's actually a really good online system.
MODIFICATION - Also, the lag doesn't hurt gameplay, if anything it helps. It slows the entire fight down at laggy situations, so no person is ahead of the other person, and you actually have even MORE time to block, reverse, counter, or plan attacks. It's a lot of fun when its laggy or perfect connection-wise.
